Disney's PROM in theaters today! (4/29)

It is Friday. Planning a trip the the theater tonight? Disney has a new movie out perfect for the whole family (even those picky pre-teens & teenagers!). Rated PG, everyone can enjoy this glimpse at one of the most important rites of passage for high schoolers.... Prom.

The dress, the hair, the flowers... do you remember your high school prom experience?

Sniffle, sniffle. It is that time of year for me. As I start to enjoy the rare sunshine in Oregon, and the blooming flowers, it hits me! Ugh. My allergies. Thankfully they only hit for a few weeks as the cottonwood and a few other offenders are in full swing, but I am miserable never the less. Any other allergy sufferers out there? Who is with me? I will raise a tissue to you.

Daring Bakers' April Challenge - Maple Mousse in Bacon

Welcome to another Daring Bakers' Challenge. I never know what to expect. Each month we are given a challenge and then need to complete it and post on the 27th. So, here it is...
The April 2011 Daring Bakers’ challenge was hosted by Evelyne of the blog Cheap Ethnic Eatz. Evelyne chose to challenge everyone to make a maple mousse in an edible container.

I have to admit I have never had either a Maple Mousse, or made a bacon cup before. The idea intrigued me, and I made an honest attempt. First came the edible cup:


Woven together, I laid it over my muffin tin and secured the pieces with toothpicks. Baked at 400 degrees for 40 minutes. I learned the hard way that the toothpicks should be removed as soon as they are cool enough to touch. Once the bacon has cooled completely it is very brittle.


See the holes? Not good. I was hoping my filling would be thick enough to stay inside...

So, onto the Maple Mousse. This was easy enough. 1 c. pure maple syrup, 3 egg yolks, 1 1/2 c. heavy cream and 1 package of gelatin.


I heat the maple up and beat the yolks. I tempered my yolks and then mixed them together.


Let the gelatin bloom in 1/4 cup. cream. Then add to the eggs. Whip the remaining cream and fold into the yolk mixture. Let this sit in the fridge and set up for at least an hour.

Then you only need to pipe it into your edible cup and chill till you are ready to serve it.


Mine were neither beautiful nor as delicate as I had wanted. I went with the example container and required filling since my creative side was lacking this month. (I think I still have Easter burn-out!) I do have some ideas about baked kale cups with a savory type of filling... hmmm... Stay tuned. I might have a make-over for these coming soon.

I have no idea what will be in store for next month's Daring Baker's Challenge... I kinda hope bread will be showing up soon. Till next month, happy baking!

Decorating my Easter Cupcakes

Hope everyone had a fabulous Easter! I set out to have a little cupcake fun this past Sunday and wanted to share my creation.


I found the most adorable silicone baking cups that looked like terracotta pots. These are the Brand Castle Blooming Cupcake kit.  They came with a few candy sprinkles (which I saved for a later project), are easy to wash and even have a fill line printed inside the cups. You can find this on Amazon.


I filled my pots with Martha Stewart's Devil's Food Cupcakes. I wanted a chocolate cupcake to represent dirt and what is better than a super rich and moist devil's food?


To decorate them, I used a simple buttercream recipe tinted green and Wilton's #233 (grass) tip. Hold it close to the cake and squeeze. Stop squeezing and pull up at about 1/4" so the "grass" doesn't fall. Start in the center and work your way out. As I piped my hands heated up the buttercream making it unable to stand up, so I took breaks and put it in the fridge to firm back up.

Try different angles to make you grass more realistic. This tip and technique are very forgiving. Either gently scrape off mistakes or add a little more to the top.


Then I used my Wilton Chocolate Pro Electric Melting Pot and a bunny mold to make chocolate bunnies for the top. Yes, you can melt the chocolate in the microwave, but the melting pot doesn't burn or separate the chocolate. It is even easier to use than my double boiler. The low, consistent heat has make chocolate work much more enjoyable for me.

Then I added some jelly beans, and a few leftover royal icing flowers from my cake decorating class. Viola!

Are You Ready for the Flats Challenge?

I love a good challenge... and since I am potty training my oldest, I see the end of my fluffy years just around the corner. Kim Rosas from Dirty Diaper Laundry has posed a challenge to Moms using cloth diapers, use flats for a week and the catch is, you can't use the washer or dryer.

I jumped at the chance. Call it a last fluffy "hoorah!", call it a change of perspective, but when I started in cloth diapering I took a giant leap. I spent $300 I didn't really have on a pre-fold and cover package. My husband was skeptical, but my love of cloth grew. I learned a lot and added to my stash. But that initial investment was a HUGE issue. At the time we shared a washer with 4 other tenants and my real use of cloth didn't start till we moved and had our own washer & dryer. When I talk to people about cloth diapers they are either shocked by the investment (I know if you add up all the sposies...) or all the gadgets involved! I do not own a sprayer and have always hand rinsed before washing, so this should be right up my alley!

Why all the extra work? Many families would love to try cloth diapers but either don't have money to get started in cloth diapering (all of my favorite cloth diapers run $18-$30 each!), and/or they don't have access to a washer and dryer.

So the week of May 23rd - 30th, a brave group of ladies, almost 200!,  will be taking the Flats & Handwashing Challenge. Learn to fold and pin a flat diaper and learn to wash and dry them by hand. Flat diapers are unbleached Birdseye Cotton diapers that cost about $16/dozen. Quite a savings!

I am up for it, what about you?

The Diaper Junction generously provided flat diapers to some participants and I was lucky enough to be one. I have to admit that when I signed up for this challenge, I thought I had "flat diapers". Actually I had been using prefolds. Flats are much thinner, so should dry much faster.

My package arrived and so did a set of of Snappi fasteners I ordered to get me out of using diaper pins. Who knows, I am not counting pins out, but I want to try the "stickless" alternatives first. I will still be using covers and different cloth diapers for nighttime.



And my test subjects?

Well, they seem eager. Now I just have to practice my diaper folding... Pad fold? Kite fold? Origami fold? I have much to learn.


I will be blogging about my journey with flats, so check back here in May to see how my week goes. At the end of the challenge all of the Moms will be taking surveys to see what we can learn about the collective journey. Just remember that if you want to cloth diaper, there is probably a way to do it.. even on a budget!

Mexican Chocolate Chili Cupcakes

Recipe:

Ingredients:
1 pkg. Duncan Hines® Triple Chocolate® Decadent Cake Mix
2 tsps. ground cinnamon, separated
1/4 tsp. plus 1/8 teaspoon cayenne pepper
1 tub Duncan Hines® Creamy Home-Style Classic Chocolate Frosting

Baking Instructions
1.      Preheat oven to 350°F. Prepare cake mix as directed.  You will have your cake batter in one bowl and filling in a second bowl.
2.      Add 1 teaspoon of cinnamon and 1/4 teaspoon of cayenne pepper to the cake batter and mix well.
3.      Spoon cake batter into prepared cupcake liners and pan.  Fill cupcake tins no more than half full.  Spoon 1 teaspoon of filling on top of the batter in the tins.  Cover filling with a tablespoon of batter.  Your tins should now be 2/3 full.
4.      Bake cupcakes as directed and cool completely.
5.      Prepare frosting by adding 1 teaspoon of cinnamon and 1/8 teaspoon of cayenne pepper to each can of frosting that you use.  Mix completely and frost cupcakes.


Hands-On Time: 25 mins.

Total Time: 1 hour and 15 mins.

Servings: 14

This Memoir follows Anthony through his journey to become a doctor... Why does someone decide to become a doctor? Maybe it is a whole life full of experiences that push a person towards medicine.  This book follows that journey and is  humorous, honest and at times touching. From super nerd with thick glasses to peanut butter and jelly devouring medical student to the media's go-to plastic surgeon, it is quite a journey to read! Just by the initial description, a memoir of becoming a plastic surgeon, I was intrigued.

So who is he? Well, Anothony Youn made his national TV debut on Dr. 90210 and has been on several television shows including: The Rachael Ray Show, The Doctors and The O'Reilly Factor. With such an impressive resume, who wouldn't want to read this book?

Reading about his non-stop studying in college, dating disasters, and rather meager social life were easy to identify with. That could be any student studying to succeed. But, I was fascinated by his stories of patient interactions that touched him early on. From a strong family of support, he worked hard, blossomed and was able to find his true calling to help others.

Review: Kim & Scott's Gourmet Stuffed Pretzels - A Big Hit!

I love trying new products, but my husband is a little skeptical when we review food. He prefers fresh to frozen foods, especially baked goods. Not long ago I dabbled with making my own pretzels, but when I heard about Kim & Scott's Gourmet Stuffed Pretzels, I knew I had to give them a try.



Could a frozen pretzel be as good as fresh? Well, I have to say these pretzels made my simple home version pale in comparison. Flavorful, chewy and stuffed with an assortment of delicious ingredients, I am hooked!


This is the delicious assortment the I received: Chocolate Crumb, Spinach & Feta, Cheese Lovers, Apple Cinnamon, Cheddar Jalapeno and Pizza Pretzel. Many other flavors are available and they are constantly adding new ones, so be sure to visit Kim & Scott's site for a complete list.

I think the simple cheese and chocolate flavors were my favorite, but we still have the apple cinnamon left to try in our freezer. I would love to also try their Savory Herb & Cream Cheese. If you are like me and can't decide which flavor to try, check out their sampler packs. Whether you lean towards savory, sweet or a bit of both, you can order a sampler from their website to fit any hunger or preference.

Besides being warm, chewy and full of flavor, I love that these pretzels are all-natural and hand twisted with premium ingredients. These are not your average mass-produced frozen treats. They do not contain trans fats and are made in a nut-free facility. There is even a gluten free option now available!

So, who is behind this great twisted idea? Well, Kim and Scott Holstein started the business in Kim's studio apartment kitchen in 1995. Now they sell nationally, from their online store as well as national chains like Target, Walmart, Whole Foods and even on QVC. Check out their store locator to find a retailer near you. Now they have a twisting cafe in Chicago where you can find their fabulous pretzels as well as sandwiches, salads and a place where kids can twist their own pretzels. If I go back to Chicago, I will be putting Kim & Scott's on my list of places to visit.

Mamavation Monday ... Bring on the Food!

For snacking we picked up a big jug of Orville Redenbacher popcorn and a popcorn popper at Costco


...and this is my absolute favorite honey-oat- whole-wheat loaf. This is a great recipe that makes 3 fabulous loaves. One to eat, one to freeze, and one to share with someone else. This time I threw in a handful of flax seed in addition to the ground flax meal.


I have been loving this for my sandwiches.


See... even a girl on 1400 calories can eat well. I wouldn't really call this a "diet" as much as a change in eating habits. I am learning more about portion sizes and balanced meals.

Review - Home-Ec 101: Skills for Everyday Living

 I wish I had taken Home-Ec in high school. It was not a popular class to take though, and I was focused on college prep classes. I do cook, and most cleaning tips I have learned from friends or painful trial and error. Not everyone has parents around to teach them the basics of cooking, cleaning or how to keep up a household, and for all of them, Home-Ec 101: Skills for Everyday Living is the perfect book to help.

The four sections; Clean it, Wash it, Fix it, and Cook it, cover all the basics. Easy to read and extremely helpful, I think this book would be perfect for the college student leaving home, clueless bachelor, new wife or stay-at-home-mom. Anyone hoping to keep a clean and organized house and save money by doing it themselves will benefit. Being self-sufficient is a real confidence booster.

The book has a kitschy-retro look reminiscent of an era when people were more DIY savvy. Moms worked inside the home as a jack-of-all-trades for keeping their homes running smoothly. I have to admit I wouldn't mind channeling some of that knowledge into my own home.

This book listed some of my favorite cleaning tricks, like vinegar and water to clean the microwave and listed all my favorite kitchen tools for outfitting a usable kitchen. My favorite section was Clean it.  I loved the simple instructions for top to bottom cleaning and making a cleaning schedule in order to not get overwhelmed. Even though I consider myself a homemaking pro, I still think I could organize my cleaning time better if I followed a simple schedule like this one.

I also love that the author, Heather Solos, is a blogger who created home-ec101.com in 2007. Her site took off and she has been featured in national publications like, Woman's Day Magazine, and on sites like Blissfully Domestic and Type A Mom. Now she has pooled all her info into this book to share with the greater population.

I highly recommend this book for anyone who has ever faced domestic challenges. Who doesn't want a cleaner home? Who doesn't want to be a confident cook? And wouldn't we all love to take care of those small projects around the home ourselves? Pick up your own copy of  Home-Ec 101: Skills for Everyday Living  now at Amazon, Barnes & Noble or your own favorite bookstore.

What Happened to Nap Time?

There has been a disturbing development in our house recently. Honestly, I don't know what to do. My 3 1/2 year old son is refusing to nap. I miss it!

I knew this would happen eventually ... but of course I was hoping it would happen later rather than sooner. The problem is my son is still very cranky during the day and without his daily nap he melts down even easier in the evening. Last night he fell asleep, but was screaming he wasn't tired up until the end.

The other problem is nap time was my chance to get things done. I used that hour or two for housework, exercise, blogging and just a needed break from my two little ones. So without sanity time, what will I do? My daughter has super-hearing and any attempt by me to wake up earlier than usual wakes her up. She is glued to my side for most of the day. My son wakes later, but is very chatty and still has trouble playing on his own. I really dread giving up my short time alone.

Yesterday we decided to put a knob cover on the inside of our room. This way my son couldn't get out on his own and wake-up his little sister. He sleeps in his toddler bed near our bed. Unfortunately there is a bathroom off of our bedroom. Can you see where this is headed?

All seemed to be quiet upstairs, but as I passed the stairs I caught a whiff of the Kandu Children's handsoap we keep in our bathroom. The smell was very strong! This is what I found when I went upstairs...


Oh, yeah. The shiny surface of the bathroom floor is water!



When I asked my son what happened he said he had gone in the bathroom for a drink of water... then he wanted to refill the water bottle... and then he decided to wash the floor! There were soap suds, soap and water everywhere!!! Um...



So, the next day we put a knob lock on the bathroom door. Of course he didn't sleep. Instead he knocked on the door and went and hid behind my bed. When I came in he had put on his new dinosaur costume and jumped out to surprise me. Yes, I was surprised. Not just by the costume, but because I think the era of the afternoon nap is finally over. My son has won his right to be nap-free.

Coca-Cola & Childhood Remembered

As an adult, I don't drink soda as much as I did in college, but I do still remember the magic of Coca-Cola when I was a child. My family didn't keep soda in the fridge all the time. We always had water and milk. "Coke" was for special occasions only and was a treat to be savored!

I remember how excited I was when I was allowed to order a "Coke" with dinner at a restaurant. This only happened if we were eating out with visiting family. We would often meet out of state family members at our favorite Chinese restaurant and once I was in school, I was old enough for a grown-up treat like a soda. This was before unlimited refills, so every straw-full was savored. Sweet, fizzy and delicious is what I remembered.

Now if I want to revisit my childhood, I only have to make Cherry Coke Cupcakes and am transported to carefree simplicity with every bite. Believe me, if you try these, you will enjoy yourself, too!

 Cherry Coke Cupcakes(makes 1 dozen cupcakes)

You will need:

Cupcakes
1 1/2 c. AP flour
3/4 c. sugar
1/2 tsp baking soda
1/4 tsp salt
1 packet of buttermilk powder
1 large egg
1/2 c. water
2 tsp vanilla
1/2 c. unsalted butter, at room temperature
3 Tbs dutch process cocoa powder
3/4 c. Coca-Cola
1/4 cup maraschino cherry juice
24 maraschino cherries

Cola Icing
1 c. confectioners sugar
2 tbsp cola

Preheat oven to 350 degrees. In a stand mixer, combine the flour, sugar, baking soda, and salt. Beat the egg, buttermilk, and vanilla in another bowl, set aside. In a small saucepan, simmer the Coca-Cola, and cherry syrup gently for five minutes. Add the butter and cocoa powder, whisk to dissolve completely. Add the saucepan to the dry ingredients, and incorporate fully,  then add the liquid ingredients, beating until everything is moistened. Do not over mix the batter.

Fill each cupcake paper 3/4 full and push a cherry into the center of each cupcake. Bake for 15 minutes or until a toothpick comes out clean.

When cool drizzle over the Cola Icing and let dry. Top with cherry buttercream and a cherry


Now that should transport you back!! Enjoy. And don't forget to share!
