Daring Bakers' July Challenge - Fresh Fraisiers!



July brought me my most intimidating and exciting challeng to date! Wow... we have a new favorite dessert here in our house. We are now completely in love with Fraisiers.

Jana of Cherry Tea Cakes was our July Daring Bakers’ host and she challenges us to make Fresh Frasiers inspired by recipes written by Elisabeth M. Prueitt and Chad Robertson in the beautiful cookbook Tartine.

I knew exactly where I wanted to go with this challenge. I saw the coconut option and ran with it. But, I must admit that I went a little coconut loco. I was able to incorporate coconut oil, extract, coconut cream as well as unsweetened shredded coconut. Unfortunately our strawberries are done, so I used fresh and local blueberries and kiwi instead.

 Let's start with the coconut chiffon cake, shall we?


You Will Need:
1 c. + 2 Tbsp all-purpose flour
1 tsp. baking powder
3/4 c.  sugar
1/2 tsp. salt
1/4 c. coconut oil
3 large egg yolks
1/8 c.  water
1/3 c. coconut cream
1 tsp. coconut extract
1/4 tsp. nutmeg
3/4 tsp. lemon zest, grated
5 large egg whites
¼ tsp. cream of tartar

Directions:
Preheat the oven to 325°F.

Line the bottom of 2 small heart-shaped spring form pans. Don't grease the sides. 

In a large mixing bowl, stir together the flour and baking powder. Add in all but 3 tablespoons (45 ml.) of sugar, and all of the salt. Stir to combine.

In a small bowl combine the oil, egg yolks, water, extract, coconut cream and lemon zest. Whisk thoroughly.

Combine with the dry ingredients and mix thoroughly for about one minute, or until very smooth.

Put the egg whites into a stand mixer, and beat on medium speed using a whisk attachment on a medium speed, until frothy. Add cream of tartar and beat on a medium speed until the whites hold soft peaks. Slowly add the remaining sugar and beat on a medium-high speed until the whites hold firm and form shiny peaks.



Using a grease free rubber spatula, scoop about ⅓ of the whites into the yolk mixture and fold in gently. Gently fold in the remaining whites just until combined.

Pour the batter into the prepared pan. Bake for 45 to 55 minutes or until toothpick inserted into the center comes out clean.

Removed the cake from the oven and allow to cool in the pan on a wire rack.

To unmold, run a knife around the sides to loosen the cake from the pan and remove the spring form sides. Invert the cake and peel off the parchment paper. Refrigerate for up to four days.

Okay, now make the Pastry Cream...

You Will Need:
1 c. whole milk
1/2 tsp. pure vanilla extract
1/8 tsp. salt
2 Tbsp. cornstarch
1/4 c. sugar
1 large egg
2 Tbsp. unsalted butter
3/4 tsp. gelatin
1/2 Tbsp. water
1 c. heavy cream

  1. Pour the milk, vanilla, and salt into a heavy sauce pan. Place over medium-high heat and scald, bringing it to a near boiling point. Stir occasionally.
  2. Meanwhile, in a stand mixer add the cornstarch and sugar. Whisk to combine
  3. Add the eggs to the sugar and cornstarch and whisk until smooth.
  4. When the milk is ready, gently and slowly while the stand mixer is whisking, pour the heated milk down the side of the bowl into the egg mixture.
  5. Pour the mixture back into the warm pot and continue to cook over a medium heat until the custard is thick, just about to boil and coats the back of a spoon.
  6. Remove from heat and pass through a fine mesh sieve into a large mixing bowl. Allow to cool for ten minutes stirring occasionally.
  7. Cut the butter into four pieces and whisk into the pastry cream a piece at a time until smooth.
  8. Cover the cream with plastic wrap, pressing the plastic wrap onto the top of the cream to prevent a skin from forming. Chill in the refrigerator for up to five days.
  9. In a small dish, sprinkle the gelatin over the water and let stand for a few minutes to soften.
  10. Put two inches (55 mm) of water into a small sauce pan and bring to a simmer over a medium heat.
  11. Measure 1/4 cup (2 oz/60 ml) of the chilled pastry cream into a small stainless steel bowl that will sit across the sauce pan with the simmering water, without touching the water.
  12. Heat the cream until it is 120 F (48.8 C). Add the gelatin and whisk until smooth. Remove from the water bath, and whisk the remaining cold pastry cream in to incorporate in two batches.
  13. In a stand mixer, fitted with the whisk attachment, whip the cream until it holds medium-stiff peaks. Immediately fold the whipped cream into the pastry cream with a rubber spatula.
Now make a simple syrup to keep the cake moist, then you will be ready to assemble the cake!

You Will Need:
1/3 c. water
1/3 c. sugar
2 Tbsp. unsweeted coconut flakes

Combine in a saucepan and bring to a boil. When all the sugar has dissolved completely, take it off the heat and pour it through a strainer to catch the bits of coconut. Let the syrup cool and store in an airtight container until you are ready to use it.

....And now it is cake time

Line the sides of your spring form pan with wrap. Don't wrap the bottom. Cut your cakes in half to make 2 layers, or you can cut out shapes from a larger cake.

Fit your first layer in the bottom of a spring form pan.

Take the simple syrup and spoon it over the cake. It will absorb a lot!! It will resemble a squishy sponge.


Now take your fruit and cut and assemble it around the edges. I chose kiwi and blueberries for this one.


Then with a pastry bag and large tip, pipe the pastry cream in around the fruit. Add additional fruit in the center of the cake and add more pastry cream.

Then add the top cake layer. Spoon more syrup over it and add a thin layer of the pastry cream. Then add a thin layer of almond paste. I made my own for this (recipe to come soon!) and then used the spring form bottom to cut out the shape.


Then I dusted the top with powdered sugar and a little extra unsweetened shredded coconut. Yum!!

This recipe ended up being my favorite so far and I can't wait to make it again. Be sure to check out The Daring Bakers if you want to get in on the baking action for next month.

Wordless Wednesday - See Anything Wrong?

I look the books before we give them to the kids, but I guess I wasn't looking close enough... the other night I caught this little mistake. Can you spot it?

DIY - Kale Ravioli #Recipe

The kale is ready in my garden and I have been searching for some clever ways to use it. Yes, kale is good for more than just kale chip and soup!

Actually, my whole milk ricotta adventure was so I could make these bad boys.... kale and ricotta ravioli. Oh, so worth the rolling and cutting.

Ravioli isn't hard to make. It does take a little more time than just rolling and cutting noodles. There are several ways to go about it from boards to cutters and of course just your fingers and a knife.

Don't be intimidated. Lets get started with the filling.


You Will Need:

8 large kale leaves, rinsed
1/2 a yellow onion diced
3 garlic cloves minced
1/4 c. chicken stock
a pinch of red pepper flakes
a pinch of nutmeg
1 c. of ricotta
1/4 c. Parmesan cheese
salt & pepper to taste

I start by separating the kale leaves from the tough stems. Then I gave them a rough chop. Set aside.

Sweat the onions in a saucepan with olive oil. When they start to turn translucent add the minced garlic and saute for one minute. Then add the kale, stock, red pepper flakes and nutmeg. Put a lid on the pan and heat till the kale is tender. Take the pan off the heat. 

You can either leave the kale rustic like this, or I used an immersion blender for pureeing up about half of the filling. I like to leaves some bits and pieces. Let the mixture cool a little.

In a large bowl, mix the kale mixture, cheeses and salt and pepper to taste. Set this aside while you make the pasta dough.

This is so easy!

You Will Need:
2 large eggs
2 c. flour (I prefer 00, but all-purpose will also work)
a pinch of salt
3 Tbsp. water - just enough to form the dough.

I make my dough in the food processor. Pulse the ingredients, except the water, until you have coarse crumbs. Then slowly add the water till a ball of dough comes together. Put the dough into a bowl, cover it with a damp cloth and let it rest for at least 30 minutes.


Then working with a golf ball sized piece, either roll the dough out flat with a rolling pin and a little extra flour, or use a pasta press or attachment. I prefer the thinnest setting for my ravioli dough, but that makes it more delicate and easy to tear. Your choice.

 Today I used a ravioli form, but if you don't have one it is faster to free-form them. I have a pastry cutting wheat that does a great job of cutting and crimping the edges.

Work with 1 heaping tsp. full of filling. One sheet goes down, fill it, then with a dampened finger brush a little water around the edges. Just a little to help the pasta stick. Too much will leave you with a sticky glue!

If you have a mold, run your roller over the top to imprint the edges. Unfortunately you will still need to cut these with a knife. The ridges just aren't sharp enough to cut between the pasta.


Take the pasta out and cut it with a sharp knife. Then place them on a piece of wax paper dusted with flour. Continue until you run out of dough.

Now get a big pot of water boiling. It should be a gentle boil so your ravioli isn't too beat up. Ravioli will drop to the bottom of a pan, and then float to the surface when they are done. This only takes 2-3 minutes and depends on how thick your dough is.


Pair this with a simple tomato sauce, and you are set for dinner! Enjoy.

Oatmeal is already one of my favorite healthy breakfast choices, but after trying Seneca Farms' Oatmeal and Fruit, I have no excuse... even while traveling... not to get in a healthy and fast meal or snack.


Each package comes with 2 microwaveable 6-oz servings. I was sent a pack of peach and apple cinnamon. Unlike the packet of instant oatmeal, the oats were not pulverized, and you don't need to add anything. Just open the top to vent, heat and eat!

I was very happy to see that there was neither high fructose corn syrup or "corn sugar" added either. In fact, the first 3 ingredients were: Water, Diced Apples and Thick Cut Oats.

This product was simple to use, the texture was great and they are very easy to travel with. It seems like most hotels now have microwaves either in a lobby or the room, so this would be a great option for trips. The only complaint I had was the product was a little too sweet for my tastes. This product has both apple juice concentrate and sugar. Maybe they will come out with a low-sugar option later.

Mamavation Monday - The Fields Are Alive...

...with all the great produce my heart desires! 

Okay, most of what I desire. I live in Oregon, so not a pineapple or banana in sight, other than what is sold at the grocery store. It's okay, I can compromise.

This is the time of year we eat what is available and in season. Oh, my goodness! It is so good. Sweet young corn from the field, fresh picked green beans so sweet and crunchy, peaches ripe and warm in the orchard along with a bunch of dark leafy green things growing in my garden. I wish Summer would never end. Here is a little eye candy (fat free!) from our recent dinners... this is fresh corn and a kale/basil pesto I made with walnuts, served with a hazelnut and parmesan encrusted pork chop.  A bit carb heavy, but we finished it out with fresh cantaloupe.


Along with the food comes afternoons spent either outside playing in the sprinkler, so my scheduled workouts have fallen behind. As with every week, I am ready to start this week out right. Despite the Gruntstyle challenge finishing up (wasn't it fabulous?) I plan to stick with the workouts and keep pushing myself to do more and shave minutes off my time.

This week my goal is simple... I am going to carve out AT LEAST 1 hour a day for myself. I fully intend to wrap up the Hotter Than Hades Virtual Marathon soon, but need to devote some time to getting in the miles. After campaign 8 ended, I felt like a rubber-band being snapped back. I went so far into working out that I couldn't keep up my house and other responsibilities. Now that the house is back in order, I am ready to seek the balance I crave.

This week Recipe Share is back!!
I finally have something I am proud to show off to you Mamavation gals. Blueberries are being picked here in Oregon and this is how I celebrated our first taste this year....

Whole Wheat Blueberry Pancakes



You Will Need:
  • 2 large eggs
  • 1 c. plain greek yogurt
  • 4 Tbsp. fat free milk
  • 2 Tbsp. butter
  • 1/2 tsp. lemon zest
  • 3/4 c. whole wheat flour
  • 1/4 c. AP flour
  • 2 Tbsp. flax seed
  • 1 tsp. nutmeg
  • 2 Tbsp. honey
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 c. blueberries
Preheat the oven to 200 degrees. This will help keep the pancakes warm as you finish making them.

Melt the butter and set aside so it can cool slightly. Whisk together the other wet ingredients and lemon zest. Then add the butter.. In another bowl whisk together the dry ingredients, except the blueberries. 

Stir the dry ingredients in the wet just to combine. Lumps are fine.

Prepare your pan. I spray mine with cooking spray since I use a well seasoned cast iron skillet. Nothing sticks to it anymore. It does take a while to heat up, but is well worth the wait.

Pour 1/4 c. of batter into the heated skillet and cook. I place each blueberry on top of the pancake... this makes for perfect distribution and allows for designs or faces if I'm feeling creative. Oh, and I hate blue batter. Put the finished pancakes on a baking sheet and put them in the oven till your family is all ready to devour them.

What nutrition lessons have you learned from your kids?
I have learned a lot in the past 4 years from my kids. I have learned that fresh and simple seems to keep everyone happy at the dinner table. Also,  a colorful and fun plate holds their attention longer.

And on a side note, because my kiddos has such a restrictive diet, due to their PKU, I have learned more about the nutritional content of fruit and veggies than I ever knew before. I know starchy veggies are higher in protein, where juicy fruits are very low. Squash, peas and broccoli have a fair amount of protein, but apples are about the lowest on the scale. I have to carefully monitor my kids' protein intake and keep it very low. It is a topsy-turvey way to look at food.

DIY - Whole Milk Ricotta #Recipe


I love cheese. One of my recent interests has been home cheese making. Mozzarella and Ricotta are two of the simplest cheeses I've made. But, I have my sights set on others. No, really! Anyone can make cheese. It isn't magic.

As long as you can find fresh, non-ultra pasteurized milk, you can be in cheese-bliss in no time!

So do you want to see how it's made? This is whole milk ricotta, there is another process to make it out of whey, and I hope to try that one out next. This is amazing... dry and crumbly, but creamy and rich at the same time. I made this batch for my kale ravioli, stay tuned for that recipe.

You Will Need:
2 gallons of whole milk
2-3 tsp. citric acid
2 tsp. cheese salt - this is coarser than regular table salt
Butter Muslin (you can use cheese cloth, but double it, or flour sack cloth. Butter muslin is best, though)

...yup, that's it...

Grab yourself a heavy bottomed pan. Find something non-reactive, so no aluminum or cast iron. You will also need a thermometer handy.

Pour the milk into your pan and add the citric acid and salt. Slowly heat this up to 195 degrees. Stir to keep the bottom from scorching. The milk should start separating right away, but will keep separating curd from whey as the temperature heats up.

Once you hit 195, turn off the heat and let the ricotta sit for 5 minutes.

Now line a colander with butter muslin. Yes, it  is different from ordinary cheesecloth.

In a pinch add multiple layers of cheese cloth... but you will probably lose some curd.

Cheesecloth has much larger mesh than the butter muslin. I can't find it locally, but you can order it from The New England Cheesemaking Supply Company. This is where I found all my ricotta supplies.

 
Let the ricotta drain for an hour or more. Letting it hang is a great way to drain away the whey. You can also press the ricotta with a large weight.


Now your ricotta is ready to be refrigerated or used as you like. My ravioli was amazing and next I will be using this for stuffed zucchini blossoms. Mmmm... the possibilities!

Back to School with Master Lock

I can't believe it is time to start thinking about school supplies, shopping for clothes and scheduling. Here in our area school is begining the end of August, and I don't ever remember it coming this early.

So, how do you juggle it all?
  • I highly suggest planning your attack early! The stores get pretty crazy with pencils and protractors flying off the shelves just a few days before school begins. For the best selection have your list handy and pick up items a little at a time. It also gives you and your kids a chance to look around and see what they really want.
  • I was always able to choose my own notebook, pencils, etc. but every store carries different patterns, characters and quality of products. So, get a jump on stocking up, it will make life easier later on.
  • Don't worry though about getting 200 #2s. If you are getting basic pencils (they can be dressed up with toppers or erasers later!) get one box and wait till the after sales kick in with massive close-out prices.
  • The same could be said for stocking a wardrobe. Now is a great chance to take stock of the kids' closet. First make a list of necessities like socks, underwear and shoes. Then move onto the "wish-list". If your children are older, have them make a list. Remind them it is a wish-list only and you will need to budget for clothing items.
  • I am a firm believer that the start of school should not break the bank. If money is tight, pick out an outfit for the first day of school and some of the necessities. Then next pay period add another few items. There will be great sales just after the rush. Another option is to find a Lay-away program or browse through consignment shops. Often you can find items with the tags still on!
