Hi there dear friend. What a wild ride this has been. I may lose you, so I had better type fast.

I really feel like we have grown close over the years. You have grown into something I admire and need in my life. Though you seemed overwhelming at first, your uses and speed have grown more than I could have ever imagined. You have been there for me, so thank you. What a wild ride!

You were there when I traveled through Asia & connected me with friends across the globe.

You were there when my children were born & I needed to share them with the everyone everywhere. Every smile, laugh and scary PKU diagnosis you were a part of. I would log on to do research, pass the time or for retail therapy. You have been there through insomnia, sickness and nighttime nursing. You even supported my passions for food, attached parenting and movies. And now you are here bringing new friends into this SAHM's living room.

You hooked me up with Facebook, that went well. You knew I would love twitter. Social networking & blogging have overtaken TV and other pursuits in my life. We have had a pretty good relationship through the years and I can't believe this may be our last interaction.
Oh internet! There will be a hole left in my life when you are gone. RIP ??- 2010.

Aloha Friday - #4

Aloha Everyone! In Hawaii, Aloha Friday is the day that they take it easy and look forward to the weekend. Can you believe we made it to Friday? We survived the week, so to celebrate let's sit back and relax. No heavy mental lifting today... just one simple little question...

What is the one thing you can't live without in a new place?

I ask this because I have moving on the brain right now. We should, I hope be moved within a month, but there is a lot of work to be done first. Nothing a little elbow grease, can of paint, and an arsenal of cleaning supplies can't fix! My biggest thing... okay, 2 top wishes were a yard for the kids to enjoy and a workable kitchen. This isn't Adventures in all things Food for nothing!

Currently we have a small area fenced out back that has a small cement pad for a BBQ & a couple of chairs with a little area of gravel. I am sure that I don't have to tell you that gravel and a two year old that could could give the Energizer Bunny a run for his money are a bad mix! If we didn't move he would either break a limb jumping off of furniture in our living room, or require an ER trip courtesy of the gravel out back. At least with a yard he has more room to run off some energy. And dirt is good for a kid's soul!

And kitchen? Well, I have big plans to only increase my culinary and canning efforts this next year. It seems like the majority of my life revolves around this room, so it is a high priority.

Wow, that was longer than you expected, wasn't it? Sorry 'bout that. I guess I am just really excited. Please let me know where your priorities are. I bet you will be more successful with brevity than I was. I always love reading your posts, so have at it.

Woo-hoo! I am a Finalist.

A little while ago I entered a contest to win an HP laptop & printer bundle over at Jolly Mom. Today I got the email that I am now a finalist! I am so excited... but, I have a long way to go. I need to get votes in order to win.

I originally wrote a blog post saying why I hoped to win, and how it would create change in my life and others in 2010. You can read my blog post HERE. I would still love to win this bundle and I could really put it to good use. As you will read, my children have a Metabolic Disorder called PKU and I could really use a printer to help with that. From printing recipes, printing off safe food lists and recording their food intake for the day that printer & computer would get a real workout. I would also love to share my love of the locavore food movement in the form of recipes and info with others.

Halo Sleepsacks, not just for Babies!

Oh, yeah... that's right! The company listened to numerous customers and finally came out with a toddler's version of the sleepsack. Before you get visions of 2 year olds falling down in potato-sack style bags, know that the company put leg holes in this version! Now I want to let the company know that I want one for me to wear. It would be even better than a Snuggy! And I want them to be footed, too. Oh, well. Yeah, on to the giveaway!

The Importance of Canned Foods

So, we are all trying to eat a healthy diet, right? And we are also trying to save a little money, right? Well, have you been utilizing canned foods? Even though I buy fresh & local during the warmer months, and can what I can... can you can-can?...I do stock my pantry with canned vegetables, fruits and beans. Not only does this allow me to make my own home version of "fast food", but it allows us to still get the healthy ingredients into our meals when things are out of season. I know you might have some questions about how safe and fresh canned foods are, TwitterMoms and The Canned Food Alliance are offering me a chance to share a little information and clear up confusion regarding canned foods with their informational video. Here are some of the highlights:
  • Dry edible beans are dried in their pods naturally.
  • Beans go through a seven step cleansing process and are sorted before going to the canning facility.
  • Beans are high in fiber can be used straight from the can.
  • The darker the bean, the more oxidants.
  • Protein is not affected by canning
  • Tomatoes are picked at the peak of freshness and canned right away. This makes them fresher than many tomatoes on the grocers shelves!
  • Lycopene is more readily available from tomatoes when canned

So, how do I use my canned foods? Well, I love to have canned beans on hand because it can cut down on my cooking time. In a pinch, I love to make rice & bean cups for dinner. It is very filling, healthy and the best part? Well, it is fast! This is one of our weekly staples.

Rice Bowls

Layer ingredients as you like, but this is the order I usually use:
Brown or Jasmine rice first
1 Can of Black Beans
Grated Cheese (your choice)
Yumm! Sauce (optional... or try a bit of ranch or dressing/sauce of choice) For more info on

1 Can of sliced Tomatoes (or fresh when available)
1 jar of Salsa
Sour Cream
1 Can of sliced Olives

Really the order doesn't matter because it is best to mix it all up before eating! Yum. I promise you will be full after having a bowl of this.

So, what do you do with your canned foods? What are your staples? I don't think my pantry is complete without tomato paste, tomato sauce, whole or sliced tomatoes, olives, and an assortment of beans. Black beans are our favorites.

Sick... and happy?

Well, first off I just wanted to let you know that we are currently in the middle of being sick. We are a nice close family... so of course, we are all sick. Even baby girl started coughing. I had really hoped she would escape it since it pulls on my heart every time she coughs. I am sure with a little time and a bit more rest we will all be good as new. It is just slowing us down a bit.

...and happy? Well, I mentioned a few posts ago that we were on the verge of making some changes around here and I was excited to share. Looks like it is almost a done deal. Part of that involves us moving back to town... just not really in it. We will have a bigger place and a clean slate to make this place our new home. (aka it needs a bit of work... kinda rough, but with loads of potential.) It is pretty bare right now and we need to figure out everything from the appliances to window coverings and a few coats of paint in between. But, all very doable! I hope to post some before pics here after this weekends visit. Maybe you all could share your decorating ideas with me. We are basically starting from scratch and need to do it all on a modest budget.

In anticipation we bought a baby gate this weekend. We wanted this to start with so I can begin cleaning and we fully plan on getting one for the base of the stairs soon. I am a little nervous about the stairs and plan to be well baby proofed. My toddler can use stairs, but he is very busy and often fails to notice things around him. This will be a learning experience for both of us. Little girl is not crawling yet, but I am sure it will be here before I know it. At least she will grow up with stairs.

The house also has a bit of a yard, still needing to be fenced, but my DH assures me this is on the top of the list. I will not miss the gravel yard-let we have enjoyed for the past 2 years here. It really is not what a little boy needs. And my brain is already contemplating the gardening possibilities! That I am really looking forward to blogging about. Last year I posted our "gutter garden", but this year promises to be even more exciting!

The downside? Other than all the work I see in our future, well... I hate moving! My DH is of the "throw it all in one big box and sort it out later" camp... I am a slow and methodical mover. I actually like to sift through our possessions in the process and see what we can live without. It will be a fabulous way to spring clean this year. Today I began with my kiddos closet. I am slowly working my way through all of my son's clothes and then will decide what to do with them. I plan on putting aside one memory box, but I haven't decided if I should donate the rest or try to trade it in at a used children's clothing store. Either way, I don't want to pack it with us.

Wow! It is going to be a crazy next couple of months. We don't have a date set yet to move but I am excited to get started. I will be keeping you all posted.

Aloha Friday - #3

Aloha Everyone! Can you believe we made it to Friday? We survived the week, so to celebrate let's sit back and relax. No heavy mental lifting today... just one simple little question...

What is your typical breakfast?

Yeah, I guess as it nears 1 am here, I have breakfast on the brain! My typical breakfast is oatmeal. I add a little handful of almonds and a few dried cranberries to it. This is quick and healthy and tides me over till I can squeeze in lunch. With two kids I am very busy in the morning preparing bottles, changing diapers and getting food and snacks all set up. Is my breakfast glamorous? No. But, I can make it one handed and in my sleep.

So tell me, are you a skip it sort, or do you go for a Grand Slam? Give me some new ideas on the hope that someday I will be able to spend time on breakfast again in the future. Thanks for your comments. I love reading them.

Chivalry is Alive for Valentine's Day

Usually Sunday dinner is a way to bring the whole family together over a home cooked meal. And it is a great excuse to break out some new food magazines or cookbooks for recipe ideas that my Mother-in-law, Sister-in-law & I are dying to try out ourselves. This Sunday, being Valentine's Day, things were a little different. The guys were in the kitchen whipping up some fabulous stuff! I am now not sure that we should let them off so easily the rest of the year! It was a wonderful way to be pampered this Valentine's Day.

They each contributed a dish to the meal; my Brother-in-law breaded up some chicken cordon bleu with prosciutto & gruyere ... while my hubby threw together a mushroom, asparagus & parmesan orzo ... and my Father-in-law baked his way to a chocolate cake. Way to go guys! I think these were new recipes for them all and they even had the timing down perfectly. Double wow!

Jealous? Oh, you should be! Add to this a little splash of almond champagne and voila! Perfection, plain & simple. Chivalry is very much alive in our family. ...and the grub is fantastic, too!

Join the Adventure with Rainbow Brite! -Giveaway

In the '80s we loved to steal fashions from the '60s. My Mother used to laugh at the styles and items I picked out. I picked them because they were trendy, she saw a fashion from her past. Well, now it is my turn to watch this 20 year cycle with toys!

Seems like many of my childhood favorites are back and I am ready to share them with my children. One fun retro toy sporting a modern makeover is Rainbow Brite. I remember my doll, it was soft with a plastic face. She had bright golden hair of yarn and fun, colorful, shiny clothing. What more could a little girl want? Well, Rainbow Brite is back with her friends Tickled Pink, Moonglow and their horses, puppy and Sprite friends.

Thanks to Momselect and Hallmark, I was sent a bunch of Rainbow Brite activity CDs. I was so excited to receive them in the mail! They contain info on all the characters, the theme song, an animated short and activities. I was impressed with the theme song and was happy to share the short with my kiddos... okay, my DD is a bit young to appreciate it yet, but she will... I am sure! I am just so excited to see this character back. And the dolls are actually back in Target Stores right now. They will be in Toys 'R' Us later this month. I love Scooters!

DVDs are fabulous! They really help to make our longer trips bearable. They have also saved me when cable went out and my son was bouncing off the walls. So, I would love to share some of the current DVD giveaways I have found around the blogisphere.
