It doesn't seem to matter how prepared I am, life happens. I pride myself on cooking from scratch and meal planning, but this past week I was knocked flat by the flu... my little ones were not feeling their best either, and we had a few rough nights where nobody got a good night sleep. My husband farms, so when he comes home at 5:30, he is HUNGRY! I try my best to have him fed as close to him coming home as possible.

My dinner drama came from a rather rotten day. I felt like I was walking in a fog all day through quicksand, not only did I forget to put out anything to thaw, but I had neither the motivation or energy to poke around the pantry for inspiration. I crashed for a very needed nap, and awoke to find it was already 5pm! Oh, no! Thank goodness eggs take no time to scramble... voila! Breakfast was served.
