Grilled Burrito Recipe and More with RO*TEL Savings at Walmart

For my hungry crew I love to whip up a large batch of Grilled Burritos. I can keep the ingredients on hand in the pantry for this simple, but delicious meatless meal option.

Grilled Burritos

You Will Need:

  • 2 cloves garlic, diced
  • olive oil
  • 1 can black beans
  • 1/2 c. chicken stock
  • 1 can RO*TEL
  • 1 c. frozen corn
  • 2 c. cheese, shredded
  • 8 large flour tortillas
  • lime wedges for serving
  • sour cream, as desired
In a large skillet warm the garlic and olive oil over medium heat for about a minute, then add in the black beans and chicken stock. Let this come up to a simmer slightly mashing some of the beans. Continue to cook for about 10 minutes.

Stir in the can of RO*TEL and corn and let this heat through. Add a splash of lime juice now, if desired. Turn off the heat.

Get a cast iron skillet or large frying pan heated to medium on the stove, then begin assembling the burritos. Sprinkle a little cheese in the middle of each tortilla then spoon about 1/4 c. of filling into the center. Fold up the burrito, starting with one end, then the side, the other end and wrapping it closed.  Repeat with all the remaining burritos.

Working in batches, place the folded side down in the frying pan and cook until it starts to turn golden brown. Flip and cook the other side.

Serve with remaining lime wedges and sour cream.

Creating Duck Spirit Squares with Kraft Coupons

Summer is ending and I can already feel an ache in my wallet. With 3 growing children there is a constant need for school supplies, larger clothes and food. Lots of food. I think some sort of switch was turned on in my oldest son because now he is always hungry and asking about snacks, when dinner will be... I am starting to understand all the jokes about teenage boys being bottomless pits.  I am scared because he isn't even a tween yet! I know I will need to start spending more time couponing in order to stretch our meal budget far enough.

While the majority of our food budget goes to staples like meat, milk and fresh produce I still like to sneak in a fun treat for dessert. I made sure to check the Walmart website and print off some coupons before heading into the store. What I noticed was a great selection of Kraft products, items we use everyday and even a few that would go together to make a fabulous dessert treat. And hey, those coupons really added up.


So while we were shopping at our local Walmart my husband and son noticed the Mascot JIGGLERS Mold Kit for the University of Oregon. Oh, yeah... I had a coupon for that but was still thrilled my store was carrying my alma mater.

It almost made us want to break out into the fight song, right in the middle of the store. We love our Ducks!


Handy right on the box was a tip for getting the perfect Oregon Green. So, I grabbed a few more boxes of JELL-O to add to my cart. Besides the grocery staples, I put those printable coupons to good use. Some were for single items and others were for buying products in combination. I was more than happy to buy the chocolate bars, which went with the marshmallows and graham crackers, but will be stashing the chocolate away for my own personal use. I call that the "Mommy Tax".


I had in my mind to create a JELL-O and cream cheese bar with the JIGGLERS "O" on top. Did you ever have them as a kid? My husband hadn't tried them before, but they were a staple at most potlucks and church gatherings I remember as a child. It would take a few Kraft brand products to create, but 3 of them I found with coupon deals.

My daughter helped get the JIGGLERS ready. See, doesn't that green look perfect? That took 2 small boxes of blue JELL-O and one of yellow.


We sprayed our molds with non-stick spray and then spooned in our Oregon Green JELL-O.


As those were chilling in the oven, I went about creating a classic graham cracker crust with Honey Maid Graham Crackers. I usually crush my crackers with my French rolling pen. It is very fast and much less clean up in a ziptop bag than if I had used the food processor.


After I mixed the crumbs with melted butter and sugar, it baked and was set aside to cool. Then it was time to start on the cream cheese layer.

Philadelphia cream cheese, Cool Whip, vanilla and sugar make an amazingly creamy layer. Just whip it all together and then spread evenly over the crust.


I chilled my base slightly before making up my lemon JELL-O. Then made sure the JELL-O was cooled slightly before pouring it over the top. I refrigerated it for 3 hours, cut, topped with an "O" and served to an exciting crowd.

These made my Duck fans happy, but you could substitute colors to fit your favorite college team. Just use one color for the Mascot Mold and another for the top layer of your bars. Of course, I don't mind if you decide to come over to the Duck-side.


Duck Spirit Squares

You Will Need:
  • 2 JELL-O Mascot Molds (2 per package)*
  • 2 boxes berry blue flavored JELL-O
  • 3 boxes lemon flavored JELL-O
  • 2 c. crushed Honey Maid Graham Crackers*
  • 1/2 c. sugar
  • 1 tsp. vanilla extract
  • 2/3 c. butter, melted
  • 2 (8oz. each) packages of Philedelphia Cream Cheese*, at room temperature
  • 2 Tbsp. milk
  • 1 c. Cool Whip Whipped Topping
Start with the JIGGLERS "O". Whisk together 2 berry blue boxes of flavored JELL-O with 1 box of lemon. Whisk in 2 cups of hot water and stir till dissolved. Spray the molds with non-stick spray. Pour into Mascot Molds and refrigerate for at least 3 hours.

Create the bar crust by mixing crushed graham crackers, 1/4 c. sugar and 2/3 cup melted butter in a bowl. Transfer to a 9"x13" baking dish and press firmly and evenly into the bottom. Bake at 350 degrees for 10 minutes. Allow the crust to cool before topping. 

In a stand mixer, beat the cream cheese till fluff. Beat in the remaining sugar, milk and vanilla extract. Fold in the cup of Cool Whip. Spread this evenly over the cooled crust. Refrigerate until the top layer is ready to pour.

Create the top layer of the bars with 2 packages of lemon flavored JELL-O and 1 1/3 c. boiling water. Whisk to dissolve all the gelatin. Allow this to cool slightly so it will not melt the cream cheese, pour on top and refrigerate for at least 3 hours in a level spot in your refrigerator. 

To serve, cut bars and top with a JIGGLERS "O". Enjoy!

Go DUCKS! Our Perfect #KettleMadness Basketball Party

In this house we are die-hard University of Oregon Duck fans, but some of our family and friends root for the state rival, the Oregon State Beavers. I wondered if these two groups could get along during basketball season? Well, we shared our love of b-ball, great food and time with friends in our #KettleMadness Basketball Party this week. It was all good fun.

My husband and I both attended the University of Oregon and I worked as an RA in the athletic dorm. This really ignited my interest in college sports. Of course, we have shared this passion with our kids who have turned into little mini duck fans. I love throwing parties and since our beloved Ducks are currently doing so well in the championship games, I thought it was a great chance to celebrate.

For the party I created a couple fun and simple crafts. Just a little something to add a personal touch to our party. My kids love craft time and it really got them excited for our big event.

I created these easy Basketball print shirts for my kids to wear. They only take a few supplies and a few minutes to create, just give them a full day to dry before wearing.

  1. Lay out your t-shirts flat and put a piece of cardboard or a place mat inside to keep the paint from bleeding through.
  2. With a small paint roller, roll a small amount of orange fabric paint onto a basketball. For the most definition use a side with lines and texture.
  3. Press the paint side of the ball down firmly onto your t-shirt.
  4. Allow to dry completely and follow the laundering suggestions on the paint bottle.


I also painted some glass gems with acrylic paint basketballs to decorate the serving table. They were fun to put around the food and really caught the kids' attention. They are also a great way to decoratively hold down your napkins or plates if there is a breeze, or kids zooming past. Draw the black lines first on the flat (underside) of the gem and allow them to dry completely before painting over the top with orange. I made mine the night before and they were dry and ready to go for our party.

For this party I went simple! Walmart offers a wide range of vegetable and deli trays to keep your guests full and happy. I went with a sandwich bar, vegetable platter, cutie "basketballs", cocktail weenies in the crock pot and a wide variety of crunchy Kettle Chips. I had a lot of fun decorating for this particular party. Instead of only using my teams green and gold colors, I chose simple basketball orange. The theme is not only classic, but easy to incorporate with our favorite foods. I found orange paper lanterns and using a simple black marker turned them into basketballs to hang. I had basketball toothpicks for the cocktail weenies, and made simple orange paper cones for the kids to hold their chips in. Paired with an orange banner and paper basketball plates, our theme was hard to miss. For a big crowd using these homemade paper cones and paper products allowed for easy clean up afterwards.

I love serving parties with a buffet or "build-your-own" option. With plenty of choices, it kept even the pickiest kids happy and allowed me to just enjoy the party and not be a slave to the kitchen.

Of course, simple finger foods like chips are always a big hit and easy for the kids to get excited about.

We had the basketball game playing in the living room, but the kids really enjoyed playing a little basketball themselves with this desktop style game. It is a lot trickier than it looked and Dad had to show the kids about finesse.

Now, you didn't think I would leave out dessert, did you?

Our final "slam dunk" of the evening was a batch of homemade sandwich cookies. I made the dough up the day before and rolled them out to bake right before the party. They were filled with a simple vanilla buttercream. Since most of my other party items were store-bought I wanted to add a little homemade touch to our spread. It also made the whole house smell amazing as the guests arrived.

One of the highlights of any party are the finger foods or snacks. You know, the things you crunch on in between game action and great conversation? I remember enjoying Kettle Chips with my family as a kid. They have such a rustic and bold flavor it is easy to see that they are real potato chips made with real ingredients. The Kettle Brand Potato Chips have been keeping it real and natural since 1982, and though I might have only been 4 when they first came out, they left a big flavorful impression on me and were always a treat.

In the championship game spirit I kept track of our favorite Kettle Chip flavors for our own little "chip bracket championship". This big flavor competition was decided by my guests.

I surveyed our friends before the party to find their favorite flavors, threw in my family's and a wildcard option. I collected everyone's opinions and also watched how fast the bowl had to be refilled. For this party I offered: Backyard Barbeque, Sea Salt and Vinegar, Jalapeno, Salt and Fresh Ground Pepper as well as New York Cheddar flavored Kettle Chips.

The overwhelming winner was definitely Backyard Barbeque. The sweet and tangy flavor really appealed to both kids and adults alike. I was really rooting for my favorite, Sea Salt and Vinegar, but I knew with the crowd they were an underdog going in.

Our party guests each went home with a "goodie bag" filled with a basketball pen, small soft basketball as well as their favorite Kettle Brand Potato Chip flavors.

Our party was definitely a hit with both the parents and kids. We would have to rate it #1! We did prove that yes, rival team family and friends can come together for a night of good food and basketball fun.
