What's For Dinner? Oyakodon
Here is one of my favorite simple Japanese meals, Oyakodon. A donburi is a one dish meal. This one is Oya (parent) & ko (child)... or Chicken & egg over rice. Hearty and tasty this is a fun one to make. So, shall we?
Okay, first off I showed you how to rinse your beautiful sticky rice. So put it in your rice cooker and it should take about an hour. Now, lets move on to the sauce. You will need:
1 C. Dashi Broth, or dry pellets with enough water to make 1 cup (dried fish flakes used for flavoring)
1/4 C. Mirin
2 T Sugar
1/4 C. Soy Sauce
Add these all to your saucepan and dissolve the sugar. Let it come up to a gentle simmer for 15 minutes. Then turn it down to low & cover.
When your rice finishes, be sure to fluff it with your rice paddle or spoon. Here is one tip, run your paddle under cold water before you use it.
Okay, now I like to pre sweat one thinly sliced onion then add it and some bite sized pieces of chicken and some whites of green onions. Save the green part to add just at the end. Let them simmer in your sauce and soak up all that yummy goodness. The onions will turn a lovely brown and taste like candy!
After your chicken is cooked through, add 3 eggs just lightly stirred in a bowl. Break the yolk, but don't scramble. Add the eggs to the top of your hot pan of onions & chicken. Now, in Japan they would turn the heat off and then spoon this over hot rice. So the egg is not set all the way. I like mine slightly cooked so I leave the heat on for a minute or two and then turn off the burner. Do this according to your own preference.
Voila! Put it over your cooked rice and it is ready to serve. Yum. I served mine with a nice glass of iced tea. So, are you ready to give Oyakodon a try tonight?
