Happy St. Patrick's Day! Minty Leprachaun Cookie #Recipe


Whether you celebrate the day with a pint of green beer, or tuck into some corned beef, don't forget to wear your green and enjoy the lucky day!


We will be enjoying the green outside, hunting for our own four-leaf clovers and spending time together as a family. We might not be Irish, but I love any excuse to celebrate.

Minty Leprachaun Cookies

You Will Need:
2 1/2 c. AP flour
1 tsp. baking soda
1/2 tsp. salt
1 c. (2 sticks) butter, softened
3/4 c. sugar
3/4 c. packed brown sugar
1 tsp. vanilla extract
1/2 tsp. mint extract
2 eggs, at room temp.
6-8 drops of green food coloring (or gel to reach desired color)
1 pkg. of Nestle Tollhouse Dark Chocolate and Mint chips


Preheat the oven to 350 degrees.

Mix the first 3 ingredients in a medium bowl, whisk to mix and set aside.

Cream the butter and sugars. Give it a good 3 minutes to fully cream at medium speed. Add extracts and egg, one at a time and mix till fully incorporated. Add the food coloring to reach the desired green color.

Gradually add the dry mixture. Stir in the chips and then chill the mixture for about 20 minutes.


Scoop a tablespoon of batter and put on parchment paper or silpat to bake for 9 minutes. Let them cool for 5 minutes on the baking sheet before transferring to a cooling rack.
