Del Monte : Adding the Garden Back Into Meals - #Recipe + #Giveaway


We love to eat fresh and here on the farm we can do that for a good chunk of the year. Now most of the crops are done for the season, but I still want to offer my family a healthy variety of fruits and vegetables to keep them healthy.

A great option is Del Monte canned vegetables and fruit. Living on a farm I have seen produce harvested for canning or freezing. It is picked at it's prime and processes so we can enjoy it all-year-round. Del Monte even cans the majority of their products on the same day to ensure nutrients and flavor are locked in. Of course I tend to run out of freezer space quickly, so during the Winter and as a pantry staple for last-minute meals I keep a variety of canned options on hand.

I was sent a variety of Del Monte fruit and veggies to help me "Add Some Garden" into my family's current meals. For this quick meal I chose to use the diced tomatoes and whole kernel corn. I love putting together easy burritos for my hungry crew. They are filling and easy to pack with lots of healthy options.


Easy Bean & Veggie Burritos

You Will Need:

  • 1 can of black beans, drained and rinsed
  • 1 clove garlic, minced
  • 1/2 c. chicken stock
  • 1 can Del Monte Diced Tomatoes, drained
  • 1 can Del Monte Whole Kernel Corn, drained
  • tortillas
  • Monterrey Jack Cheese, grated
  • Avocado, sliced
  • salt and pepper to taste
  • Sour Cream *optional


Place a little olive oil in a frying pan and heat to medium. Add the black beans, garlic and chicken stock. Bring it up to a simmer and then lightly mash the beans.

I like to leave some whole, but create a nice thick base. The chicken stock will be absorbed and the beans will be fragrant and tender.


Turn the heat down to low and stir in the drained tomatoes and corn. This is the time to salt and pepper to taste. There are many options for making this your own... try taco seasoning or cumin. Add in some hot peppers or mild green chilis. I also like to keep it plain. The chicken stock imparts a nice simple flavor without added fat. Heat the vegetables through.


Prepare your tortillas with a little (or a lot!) of shredded Monterrey Jack Cheese on the bottom. Then spoon over some of the filling. I am a chronic over-stuffer! Fold up from the bottom and then sides.


Garnish with sliced avocado and sour cream. This meal really couldn't be simpler.


Ready to dig in?


For my kids I filled Del Monte pear halves with a little yogurt and diced up Del Monte peach slices. Simple really can be fresh and delicious.
