Need a Solo Meal, Fast? Tai Pei to the Rescue!

With my son at school, my daughter going through a picky eater phase and a husband who cancels lunch plans last minute, I am often left with the question of, "What should I make for lunch?"

I don't see the point in making anything special when I am eating solo. There is always laundry to be done or projects to tackle, so I like to grab something quick. Yesterday was just such a day.

With no left-overs handy and not even a spare slice of bread to be found, I was hungry. I grabbed a Tai Pei single serve Orange Chicken entree from the freezer. I double checked the cute little take-out box... just heat and eat. Rice was included and instructions asked me to leave the wrapping on the box - to get all the food inside steamed and perfect!

I love that you don't even need to add water, or remove or stir anything. It is ready to go directly from the freezer to the microwave. I can handle that.


I love Asian-style takeout, but in my small town, it just isn't an option. Am I the only one who loves reading her fortune after a meal of Chinese food? Well, the cute little take-out boxes have a QR-code on the side, so I can get my fortune fix - minus the stale cookie.

I'm really okay with that.

I Know a Woman Who Shines, Do You? #WomenWhoShine

When I heard about the Yahoo! Shine "Women Who Shine" nominations to celebrate real women doing extraordinary things, I knew right away who stood out in my mind.


I am really excited about this program because we probably all know someone special who deserves to be recognized. Don't let modesty stand in your way. Telling these women's stories is inspirational to all of us. Share and prove that one person can make all the difference. Yes, real women doing amazing things to change their community or the world. If our world was full of more people like this, think of what an amazing place it would be.

My life has been graced by many wonderful women, but there is one person I know who would never think of herself as extraordinary. Someone I have know for years and has always had a giving nature and a kind heart. I nominated Shanti Shoji.

On February 14th of this year Shanti became a living kidney donor for a complete stranger. Prior to this she didn't know anyone who had gone through organ donation, let alone a live organ donation. Her experience only extended to marking 'donor' on her drivers license. Her journey began after reading a friend's Facebook post back in June 2011. The friend was spreading the word about a man, Mike Trad,  who desperately needed a kidney. Shanti wanted to reach out and get tested. She felt strongly that she was destined to help in some way. After contacting Mike and explaining she was a blood type match she began the process of testing. Through an interview, medical history and other tests she was found to be compatible in several areas though not the best match possible for Mike. By the end of 2011 though, after other possible matches had been investigated, Shanti was contacted again to see if she was still interested. She was still committed to the organ donation and their journey continued until the successful donation earlier this year. 
Shanti became passionate about live organ donation through this life-changing experience. While many people die waiting for a transplant, getting a kidney from a live donor can extend the average length of success from the expected 10 years from a cadaver kidney to 18 from live organ donation. Passionate about a cause and compassionate for people, Shanti is an amazing inspiration for all of us, and a woman who, I believe, truly shines.

When I met Shanti, we were two Oregon high school student traveling to Japan for an exchange program. We met again during college and as we both interned at companies in Japan. She has always had a bright and shining personality. I was not completely surprised when she posted about being a live organ donor, it just made sense. She has always been a giving and loving person.

Parenting: The Ultimate Hard and Soft Compromise #CharminVote

Are you a strict parent? Or a push-over?


Parenting is officially the toughest journey I have ever started. There is still so much for me to learn, and I expect to learn a little more everyday from my kids. One thing I've realized is that parenthood is a constant balancing act between being "soft" and being "strong".

I have both a son and a daughter. Love them to death, but they are polar opposites. From personality to the discipline and direction they require, they each need a different combination of 'soft' compassion and 'hard' rules and expectations.

Am I a strict parent? Well, depending on who you talk to, there are somethings I just won't budge on. My son picking up a hose and spraying down our friends at a party? Well, that required swift action! Quickly removed from the fun, a time-out in silence to reflect and a lengthy discussion with me over why that was wrong and what the consequences would be. He is five and definitely understood that wasn't appropriate. He became carried away with the fun and didn't think about his actions. There was no yelling involved and we discussed more appropriate fun he could

Then there are other times when gentle talks, snuggles and encouragement are more in order. When my son has a tantrum or gets really worked up we practice deep breathing. Silly? Maybe. But it works well to get him to calm down so we can talk. Even when he yells, punches and kicks on his bed, a soft voice and repetitive, "breathe with me" usually works. I try my best to view each situation, child and options carefully. Am I perfect? Absolutely not. Of course being 'soft' and loving with children also means admitting when I am wrong and saying, "I'm sorry".

Out of my two children my son is usually the one to get into trouble and push boundaries. He is energetic, creative and passionate about all he does. So he is easily carried away and sometimes takes things too far. Since he is usually the one to yell or shout out when he gets excited, sometimes I blame him without realizing it was his little sister. She just turned 3, and is quickly testing limits and rules herself.

I hope by showing my children even parents make mistakes and need to apologize when they are wrong, that being 'soft' is a strength all of its own. Remaining calm and gentle in the middle of a situation is often harder than yelling or getting angry myself. I believe true love is forgiveness and compassion tempered carefully with discipline.

So 'hard' or 'soft', I don't think you can have successful parenting without a mixture of both.

Striving Each Day For My Best Life - #CloroxLounge


When you wake up in the morning are you excited to face a new day? Do you start with regrets or reservations?

My goal this year was to strive to make healthier choices for myself and my family. That could have been an overwhelming goal. A whole year, so many unknowns to face and situations I hadn't imagined would happen, it might seem impossible. Instead I am concentrating in living my best life by being present.

Now, this is a big a vague concept. Presence. I want to be present in every moment, choice and action that I do. I want to be present enough to savor the food I eat and cherish each giggle that escapes my children's mouths.

Since becoming a parent I have faced unimaginable things from sleepless nights with a crying infant, to sleepless nights with a sick and weak toddler to the worry over a medical diagnosis that not only changed how we ate, but how I raise my children. I felt like a small boat drifting from one crisis or joy to the next. I like to call it "Mommy fog". the alarm would ring and my day began. Each day was like the last and each night I wished I could break out of my rut. Get more accomplished and feel better about my day.

I can't say it is easy. I was holding myself back. I was staying up later to accomplish more, only to be twice as tired the following day. It was a cycle hard to break.

Slowly, I am trying this idea of presence.

I am forcing myself to slow down enough to make choices that are best for me, not just convenient. I have simplified our food enough that we eat more things raw or simply steamed or dressed. I can taste the food and savor every bite. Since I prepare the food for the whole family I know my children and husband are eating better as well. Each week I try new recipes with foods in season. Being present also means appreciating what is available around you.

Being present in my day means taking the time to enjoy the wonders of being a 5 or 3-year old through my children's eyes. Whether we sprint between telephone poles on our walk, or stop to pick blackberries, there is no autopilot anymore. Every choice is made to be enjoyed and remembered. Silly is in and not keeping a flexible schedule is out.

The hardest part of this is giving up control. The dishes are not always clean, the beds go unmade on occasion, but we are embracing Carpe Diem! Life is meant to be grabbed and thoroughly enjoyed. This is how I am striving each day for my best life. How are you striving for yours?

New Applegate Hot Dogs - Get Your Grill On! (#Applegate)


As long as the weather is still warm we will be enjoying out grill. Food just tastes better having been over a flame. Veggies are tender, fruit sugars have caramelized, and meat is cooked to perfection!

But here is my confession: last week I ate my first hot dog in years.

Hot dogs? A guilty pleasure from my childhood that I put away once I started to learn what they were made of. Cheap, mystery-meat-sticks full of antibiotics and nitrites just didn't make my mouth water anymore. Yes, the ingredient list scared me off of the classic hot dog.


Last year we switched to nitrite-free lunch meats and I haven't looked back. My favorite brand, and one of the few to fit my requirements, was Applegate. I love their pre-packaged organic smoked turkey breast meat. It is perfect for making a big stacked sandwich!


So when I heard that Applegate had a new hot dog, I was excited! A big juicy hot dog was definitely in my future. Nitrite, hormone and antibiotic free, they create their dogs from healthy animals while using integrity in their farming practices. Made with real beef, water, salt and spices, it is what I think a hot dog should be. All fun and none of the extra stuff!


So with hot dogs on our grill, it was almost time for dinner. What do you like to serve up with your dogs? I love to enjoy my time on the back porch while my husband grills, so I keep our sides super simple, fresh and clean.


Here are my tips to get the most out of your grilling experience:
  1. Go Simple - Grilling is half the fun, so don't get too complicated. Grab some fresh fruit and vegetable for kebabs or to go straight on the grill to serve along with your hot dogs.
  2. Bring your grilling items to room temperature before grilling. Meat and veggies just a need a few minutes before going on the fire but will cook more evenly if not straight from the fridge.
  3. Grab a Mister - Mist meat or veggies with a little olive oil before grilling. A mister will save you money and excess calories.
  4. Marinade or Shake it up - for added flavor grab a marinade, rub or shake to add extra pizzazz to your grilled goodies. Herbs and spices can liven up your palette without all the extra sodium or fat from butter.
  5. Choose your Condiments Wisely - Check the labels on your favorite ketchup and mustard. We always search for the condiments that don't include high fructose corn syrup and have the fewest ingredients.
  6. Grab a Meat Thermometer  - This is a must-have for all 'Grillers'. Black on the outside doesn't always mean the inside is cooked. Check to make sure your grilled meats have reached a safe temperature with a simple grilling thermometer. There are many brands on the market. I use one that can stay in the meat while cooking.

My husband let me know afterwards that I turned a deep shade of red. I was just happy to get the family back to the car and then home to fix the problem.

Busy? Give Dawn Power Clean 5 Minutes to Clean + Tips


I love to cook! The downside is always clean up. So far I have been unsuccessful at bribing my family to take over dish duty. It might be because I tend to create a fair amount of chaos in the kitchen.

Baked on, greased up, dried on... you name it and I have had to tackle it in the sink. This battleground usually takes up a good portion of my evening. It goes something like this, scrape, rinse, soak, scrub and repeating soaking and scrubbing as necessary.

This weekend's meal was a true test for the Dawn Power Clean kit I received to test. I was sent the dish soap, a sponge and a timer with instructions for this challenge to let Dawn help me with the scrubbing.

Okay...


For Cinco de Mayo I went all out. I made queso fresco, refried beans, masa sopes, and caramel for flans. Now that was a lot of dishes. I did my dishes as I worked through the meal  (see my tips below) to stay on top of the mess. This time I let the different pots, pans and ramekins soak for 5 minutes in the Dawn Power Clean before even taking a brush or sponge to them.

It worked beautifully! Even on the dried beans, scorched milk stuck to the bottom of my saucepan and hardened caramel. It all came clean and I didn't have to spend extra time and elbow grease in the kitchen.

Our family is already Dawn brand fans. I have been using Dawn dish soap to wash the car as well as love how easy it is on my abused "kitchen-hands".  I am very excited about this new product though, because it has a great, light rain scent but all the cleaning muscle that I would associate with a stronger smelling cleaner.

Of course not everyone has time to make everything from scratch, and there are even evenings when I go a much simpler dinner route. So, I wanted to share a few tips for being efficient and saving time in the kitchen.

  • Start with Clean Counters - One of my personal rules is to always start work in the kitchen with a clean counter. Before I start chopping or creating I like to clear the counters and give them a good wipe down. This saves me time later by having a large, clean area to put all my ingredients and needed tools to start work on dinner.
  • Prep-Ahead - After our weekly grocery shopping trip I try to prep as much of the food as possible ahead of time. Wash and chop veggies, portion out amounts, cook staples ahead of time and when possible, freeze it! Some of my favorite things that can be prepped ahead are dry beans. Just soak them, cook in a crock pot for 4 hours, cool and freeze in 1 or 2 cup increments. Then all I have to do is defrost and my beans are ready. Another great tip is to juice and zest all lemons when you brink them home. Freeze the zest in a bag, and freeze the lemon juice in an ice cube tray. It will always be ready to go when you need it.
  • Clean as you Go - It is easy for my sink to start overflowing with dishes if I am cooking a big meal or doing a 'once a month cooking' session. If I rinse or put dishes in to soak as I go, I am more likely to quickly finish kitchen clean up after dinner. Intimidating piles of dirty dishes often get left until the morning and by then the messes take longer to clean up.
  • Run the Dishwasher Before Bed - I like to start my day clean and fresh. I can stay on top of the kitchen messes and my chores by always filling and running the dishwasher before bed. Then I can put the dry dishes away first thing in the morning and I am ready to do it all again.
  • Get Everyone Involved - The sneakiest tip I have to share is to make the kitchen and dinner preparation part of your family activities. I get my husband involved helping, the kids setting the table and mixing, freeing me up to put it all together. No matter how busy we are, we are working to prepare a meal we can enjoy together as a family. Now, that is a pretty efficient use of time, right?

Spice Up Your PAR-TAY - With #FarmRichSnacks

Now that Spring is in the air I always feel the need to get our friends over for a good party. Anytime of year is the right time for a party, but warmer weather for me means longer nights, backyard BBQ s and friends.

But there is no need to settle for the same old party this year. Why not Spice it up?

It all comes down to food for me. I love offering my guests a wide variety of finger-friendly items to munch on. Nothing too bulky or messy because I want to keep the guests moving and talking. But, every good party needs some delicious food.

Take the old favorites and kick them up a notch!
  • Hot Sauce - Make a big tray of nachos in the oven piled with all the goodies, from olives, black beans, jalapenos and cheese. Have a couple bottles of hot sauce handy so guests can add their own preferred level of heat. Make sure you always have a mild option, but also have a few choices available if your guests dare.
  • Garlic - Peppers are not the only way to add heat to a dish. Try extra diced garlic in your bruschetta dip to bring up the flavor.
  • Salsa - Everyone's favorite condiment can be mild or hot depending on the potency of the onions and the peppers used. I always think fresh has the most kick, but let your flavors meld for an hour or two to really bring out the heat. Serve with tortilla chips, toasted bread, pita or lettuce leaves.
  • Red Pepper Flakes - These handy little heat bursts can be added to your favorite spinach dip or even deviled eggs to bring up the spiciness. 
  • BBQ Sauce - Depending on the BBQ sauce you use, you can turn up the heat on wings and meat by looking for a sauce with more pepper and chili. 
  • Wasabi - If sushi is your favorite, don't forget to add a pile of green wasabi to the serving platter to fire up the taste buds.

Be warned... if you dare your guests to some spicy fare be sure to have bread or milk handy if the fire gets to be too much. Your guests will appreciate an easy way to put out the heat.

From the Farm to Our Table - #TropFloridaOJ


The importance of bringing farm fresh foods to the table is well understood by my family. My husband is a farmer. He puts his heart and soul into what he grows because it is what we feed to our family.


We may grow the vegetables that we eat and collect our own eggs, but luckily you don't have to. There are great ways you can enjoy your own local farm fresh food in the community you live in.

Find out what your area known for. With the warmer weather comes back the seasonal farmer's markets. Look around, meet the growers in your area and get to know what is available. You might be surprised what the people around you have for sale. You may find everything from the best fingerling potatoes to local honey.

Check with local farms to find out if they offer U-pick options. Not only is it an inexpensive way to bring fresh produce to your table, but it is also a great way to get the whole family involved with your food. We love picking our own Strawberries and can't wait to get out with our buckets soon. I will freeze our extra berries so we can enjoy them year-round.

With the rise of urban chicken coops, fresh eggs might be closer to you than you think. Ask around. I always have a surplus and know many chicken enthusiast who are happy to sell their excess bounty.

Grab a Seat for the #CloroxLounge - Potty Jokes Included

Be it ever so humble...

...there is no room as used as our bathroom. As a Mom of two little ones I have spent a fair amount of time cleaning it, giving potty training help and well, making use of the door to get a few spare moment of time alone.

Before becoming a parent I loathed cleaning the bathroom. I spent very little time in there and never understood why anyone would install magazine racks or take any longer than they needed in there. Now, it is one of my favorite rooms of the house.

I still don't enjoy cleaning it, but I have new found respect for the freedom that it provides. Whether it is a child-free moment, or my son being independent and diaper free using the toilet on his own, I see our "john" in a whole new light.

We used to have a potty seat in the living room. My son has a very short attention span and to avoid accidents I set up potty chairs all over. In total, I think we have 3 or 4 of them. Cleaning for a big party  I managed to put all of them away except for one I missed. During the party, completely unaware that it wasn't "normal" to 'drop trou' in front of 20 people, my son proceeded to pull out and use his potty seat. Luckily the group was full of parents and toddlers so there was some laughter, but no one was too shocked.

Now the only potty seat is in the bathroom.

My biggest trick for potty training is to use a wide variety of potty chairs, benches and seats, but don't rely on them for too long or you might have your own party-potty-moment like mine.

If you have children you  probably have your own fair share of humorous bathroom inspired stories. The Clorox Family of Toilet Products has recently launched a fun new website to highlight the humor the bathroom brings into our lives. “Cancel the Mold Show in Your Bathroom” Sweepstakes #TilexClean

Not just the sink... but, all around the edges, crevices and grout?

I wish mine was cleaner. I tend to not think about our bathroom while I am making my cleaning rounds. I hop in the shower in the mornings before my eyes are fully open and I rarely take a good look round the tub. Well, except when I give my kids a bath.

Usually I scrub down the tub, or at least where the tub and shower walls meet before I let my little ones play in our tub. Poor ventilation and a busy lifestyle often leaves our bathtub a damp, warm, mold-perfect environment.

Well, if you are looking to "Cancel the Mold Show" in your own bathroom, here are my trial and error tips:
  •  Circulate the Air - Crack open a window and turn on the exhaust fan while showering to lower the humidity. Our bathroom doesn't have a window and moisture can build up fast so we always turn on the exhaust fan and often use a small box fan in the doorway to circulate the air and help the room dry out.
  • Clean Regularly - I hate the smell of strong bathroom cleaners, so I try to clean a little everyday so it doesn't build-up. A once a week cleaning with a bleach based spray seems to be enough if I also scrub down the tub and walls with a little baking soda and a stiff brush between cleanings.
  • Repaint - Yes, some paints are more mold resistant than others. If you find you have a problem in your bathroom, especially over your tub or shower area, think about repainting with a resistant type. The extra money will save you time in the long run.
  • Clear the Damp Clutter - Don't leave places for mold to form or spores to spread. Make sure wet towels have a place to be hung up, don't leave wet items or rugs on the floor, and trying to expose your items to the sun occasionally. This could be as easy as opening up a window (if you have one), or line drying towels, rugs, etc.
Mold and mildew are a constant battle for me, but I am proud to say that so far, I am winning!

Clorox Cleanup Shares Their #RecipesForFun

As a Mom I have seen many different kinds of messes. Sticky messes, slimy, gooey, and the worst are those are surprise messes... the ones where you turn around and have no idea what happened, or what the mess is? Since I can't get away from messes from my two small children I might as well embrace them and get in on the action.

I usually think of Clorox brand as what I use after the fun, but with the launch of their new website, Clorox Recipes For Fun, Clorox Clean Up Cleaner wants you to Mess it Up and then Clean it Up with their help.

I love this idea. Instead of just thinking of the hassle of those spills, splatters or smudges, get into the fun of what creates them. The site is full of great ideas on how to have fun with your children. From Wacky Science, Kids Cooking, Arts and Crafts and more, they common thread is your kids will learn, have fun and of course... make a big mess!

Looking over the site I found so many great ideas I can enjoy with my small children at home. I couldn't wait to get started and chose something I have never tried, Squishy Eggs.


According to the directions, after a day or two of the egg being submerged in vinegar the calcium carbonate will dissolve leaving only the membrane around the egg. My kids will be able to play with the slightly rubbery egg until it breaks. Yes, that is where the mess comes in.


We can already see the process starting and I hope we can get hands on tomorrow.

So what is my recipe for fun?


Strawberry U-Pick - Wacky (and tasty!) Science
You will need:
Containers with lids - save sour cream or butter tubs. Poke two holes near the top and thread with yarn so older children can wear their picking tub about waist height.
Take rubber boots in case of mud
Sunscreen
Water to drink
Paper bag to sit or kneel on
Hand towel to wipe off messy hands

Half of the fun is to sample while you pick. It is a great chance to stock up on healthy berries, look for bugs and spend some quality time outside. It is a great time to discuss photosynthesis and how the sugars of the berry develop with help from the sun. Try a white berry and you might pucker, but find a bright red one and nothing is sweeter! Or what about the brown ones? Well, decay has set in.

Cooking with my Kids & Keeping it Healthy! #BensBeginners

2012 my biggest New Year's Resolution was to ban all the unnecessary foods, the junk, the sugar the dyes and additives. We are cooking up a storm and trying to keep it real and healthy.

Now, living on a farm tends to make this a little easier. That doesn't mean I'm not concerned about raising my children to be good cooks and good eaters though. One trick that has worked well has been to get my kids involved in the kitchen.

My son is so excited to don his apron and get out his own "kid friendly" utensils.

Even with this enthusiasm Winter is the toughest time of year to cook healthy meals for our family. Our own produce is out of season and the shorter days have me running for old comfort foods. Since those are generally laden with cream and calories, I have to search for alternatives. Good wholesome grains, like rice, have been my staples.

Here is a list of things to get you started cooking healthy with your kids:

1. Stock up on Staples - Having basic pantry essentials makes even last minute dinner drama easier. I don't like down the street from our grocery store, so it helps to be prepared. I try to keep things organized so even my son can help locate the ingredients on my list. I keep dried goods, beans, rice, and other grains on hand at all times. They also last longer and can help to stretch tight monthly budgets.


2. Let the Kids Help Shop - Our son comes along when I do the grocery shopping. Sometimes he stops and asks about exotic fruits or new vegetables he isn't familiar with. I can't do it on every shopping trip, but I do try to look for recipes to incorporate some of these new items on upcoming menus. This helps me keep our menu seasonal and take advantage on sales of squash or dark leafy greens during Winter. Variety is important and fun for all of us.

3. Appropriate Sizes & Knives  - Early on I knew I wanted my kids in the kitchen cooking with me. The biggest obstacles for small hands are the utensils and tools. I don't want a 5-year old wielding one of my sharp Henckel knives, but I was able to find him a set with nylon plastic knives that were not as dangerous. The grips are age and coordination appropriate and I am not worried about him ruining my good tools or hurting himself.

4. Prepare & Present - My son, like all kids, has some food hang-ups. I can usually minimize these if he is invested in the food we eat. Getting his hands on the food and watching it transform into dinner is a powerful thing. He is so proud to help present the food to his Daddy after work. "Look Daddy, I made this" is commonly heard in our house.

5. Explore New Flavors Together - To keep food fun and exciting, take a trip around the world for your recipes or spices. We are big fans of the citrus flavoring Ponsu, often used in Japan, to liven up our veggies or stir fry. We also enjoy trying new pizza toppings or new mix-ins for our steamed rice. Explore new flavors and textures together as a family.

Of course remember to have fun. This is time to spend with your children and give them real life skills they can use for their entire lives. It is time to connect and interact creating something important, your food!
